When browsing the weekly ad for the market, I noticed peaches were the weekly special. So, I was off to the market to pick the perfect summer peach. How do you pick the perfect peach? Smell them for sweetness and then feel them for softness.

Step one- blanch the peaches and submerge them in an ice bath immediately. This makes them peel very easy.

Step two- the crust. In the food processor, prepare a traditional pate brise dough. Chill, then roll out.

Step three- prep the filling. Slice the peaches 1/4 inch thick and cover with 2 tbsp vanilla extract and 3/4 cup of granulated sugar.

Step four- bake it. Brush the crust with a light egg wash, then bake at 450 for 20 minutes. Reduce the heat to 350, and bake for an additional 50 to 60 minutes.
